Swiss Cheese Fondue

Method

1. Rub the inside of the fondue pot with the halved garlic clove, then discard.

2. Combine the grated cheese and cornstarch in a zip-lock bag and shake until mixed.

3. Heat the wine and lemon juice in the pot.

4. Slowly add the cheese-and-cornstarch mixture and stir until the cheese melts.

5. Add the kirsch or liqueur, and a pinch each of pepper and nutmeg.

6. Don't overcook, or the fondue will get stringy.

7. Serve at once.
