Ingredients: 2 lb frozen hash brown potatoes; ½ cup margarine; 1 can cream of mushroom soup; 1 pint sour cream; 2 cup shredded cheddar cheese; ½ cup onions, chopped; salt and pepper, to taste

Melt the margarine and mix it with the partially frozen hash browns in a 9x13-inch baking pan.

Mix together the cream of mushroom soup, sour cream, shredded cheese (reserving 1 cup of cheese), chopped onions, and salt and pepper, then pour over the potatoes.

Bake in a 350°F (175°C) oven for 1½ hours, or until done.
