Ingredients: 1 baked pastry shell, 9-inch; 6 oz semi-sweet chocolate chips; ⅓ cup milk; 1½ cup miniature marshmallows; ½ cup milk; ¼ tsp salt; ¼ tsp peppermint extract; ⅛ tsp red food coloring; 1 cup heavy cream, whipped

Method

In a double boiler, combine the chocolate chips and 1/3 cup milk and heat until melted and the mixture is smooth. Remove from heat and set aside.
In a double boiler, combine the marshmallows, 1/2 cup milk, salt, peppermint extract, and food coloring. Stir until melted and the mixture is smooth.
Chill until slightly thickened, then stir again until smooth.
Fold in the whipped cream and spread half the mixture into the pie shell.
Dollop with the chocolate mixture and swirl with a knife.
Repeat the procedure with the remaining peppermint and chocolate mixtures.
Chill about 2 hours before serving.
