Ingredients: 1 box penne pasta; 1 onion, finely chopped; 1 bunch fresh spinach; marinated artichoke hearts; 1 clove garlic, finely minced; Parmesan cheese; fresh tomatoes, chopped; olive oil; capers; fresh basil; black pepper; garlic salt

Method

Boil the pasta in salted water until done, about 10 minutes. Drain.

Add in the onion, garlic, garlic salt, tomatoes, basil, and capers.
Lightly sauté the spinach in a little olive oil until wilted, then add to the salad.
Chop the artichoke hearts (2 jars) into bite-sized pieces. Add them, along with the oil they were packed in, to the salad.
Season to taste with the garlic salt, pepper, and basil. Sprinkle with about ½ cup of the Parmesan, then chill for about 1–2 hours before serving.
