Ingredients: ½ cup butter; ¼ cup sugar; 1 cup flour; 1 cup sugar; 3 tbsp butter, melted; ½ cup dark corn syrup; 3 large eggs, beaten; 2 tsp cornstarch; 1½ cup pecan halves; 2 tbsp good-quality bourbon or rum

Method

Crust

Mix the crust ingredients until crumbly, then pack into an 8×8-inch pan sprayed with cooking spray (PAM). Bake 15 minutes at 350°F (175°C).

Filling

Stir together the sugar and melted butter. Add the corn syrup, eggs, cornstarch, pecans, and the bourbon, rum, or vanilla, and stir until all the ingredients are combined.
Pour the mixture evenly over the crust.

Bake

Bake for 10 minutes at 375°F (190°C).

Lower the oven temperature to 350°F (175°C) and continue to bake for an additional 25 minutes, or until the bars are set.
