Pounded chicken breast dredged and pan-fried, then folded with penne in a white-wine cream sauce with sun-dried tomatoes, Parmesan, and spinach — tossed in the bowl with kalamata olives and marinated artichoke hearts.

Method

From the family

  • "HWC" on Rob's original is heavy whipping cream.
  • The card lists "chicken stock" in the ingredients and "chicken broth" in the method — they're the same thing here.
  • Olives are half a 6 oz jar and artichoke hearts half a 7.5 oz jar, both drained.
  • Penne is ¾ of a standard 16 oz box.
  • Seasoned flour (for dredging), fresh basil, and crushed red pepper are all to taste — no fixed amounts on the card.
  • The card lists fresh basil but doesn't place it in the method; add it to taste at the end.
