Ingredients: ¼ cup balsamic vinegar; 2 tbsp mustard; 2 tbsp lemon juice; 2 garlic cloves, minced; 2 tbsp olive oil; salt and pepper, to taste; 1 whole chicken; ½ cup chicken broth

Whisk the vinegar, mustard, lemon juice, garlic, oil, salt and pepper until well mixed. Pour over chicken in a large zip lock bag and marinate for 2 hours to up to a day.

Preheat oven to 400°F (205°C). Place chicken in a greased baking dish and roast until the chicken is cooked through, about an hour.

Transfer the chicken to a serving platter and whisk the chicken broth into the pan drippings. Pour over chicken and serve.
