Ingredients: 2½ lb chicken, cut up, or equivalent chicken pieces; 2 tbsp olive oil; 1 cup onion, chopped; 2 tsp garlic, finely minced; 1¼ cup red or green bell pepper, chopped; 1½ cup zucchini, trimmed and sliced; 2 cup fresh or canned tomatoes, cut up; 1 cup uncooked rice; 1 cup chicken broth; 1 bay leaf; ½ tsp dried thyme; garlic salt and pepper, to taste

Season the chicken to taste with garlic salt and pepper, then brown it in the oil.

Add the onion and garlic and stir to blend. When the onion wilts, scatter the bell pepper and zucchini over all.

Add the tomatoes, rice, chicken broth, bay leaf, and thyme.

Cover and cook for 20 minutes.
