Ingredients: 1½ cup graham cracker crumbs; 1 tbsp sugar; 5 tbsp butter or margarine, melted; 3 8-oz package cream cheese, softened; ½ cup sugar; 3 eggs; 1 tsp vanilla; 1 tbsp all-purpose flour; cherry pie filling; 1 cup sour cream; 1 tsp vanilla; ¼ cup sugar

Method

Preheat the oven to 350°F (175°C).

Crust

Mix the graham cracker crumbs, sugar, and melted butter together and pour into an 8- or 9-inch springform pan. Press down on the bottom to make the crust.
Bake at 350°F (175°C) for 10 minutes, then cool.

Filling

Mix all the filling ingredients together except the eggs, until the mixture is smooth and at room temperature.
Add the eggs and beat at high speed for about 1 minute.
Pour the mixture over the crust and put into a 400°F (205°C) oven. Immediately turn the oven down to 200°F (95°C) and bake for 45 minutes.

Remove from the pan while still warm.

Topping

Top with cherry pie filling, or with a mixture of the sour cream, vanilla, and sugar.
