Bavarian Mints

Name: Bavarian Mints
Yield: one 8-inch square pan
Ingredients: 1½ lb milk chocolate, melted; ¾ cup cream, scalded and cooled to 130°F (54°C); 6 drop mint oil; 1 tsp vanilla, optional

Serves 16 · one 8-inch square pan

A simple two-step chocolate-mint candy — melted milk chocolate beaten smooth with scalded cream, set in a square pan and cut into mints.

Method

Melt the chocolate in the microwave for 2–4 minutes at 50% power, checking it every minute or half-minute.

Beat the chocolate with a mixer until smooth.
Slowly add the scalded cream that has been cooled to 130°F (54°C) or less and beat until smooth.
Add the mint oil and/or vanilla and pour into an 8x8-inch square pan that has been lined with foil or parchment paper.
Chill, then cut to serve.
